So imagine a really thin oatmeal cookie that tastes like magic and everthing good in the world, and you have this cookie. But seriously, its sweet, kinda chewy-kinda crunchy, just delicious. And they take like 20 minutes total to cook! That’s including prep and baking time. I made these because my sister’s friend is over, and we’re just not doing anything today. SO WORTH IT.

"Apple Yum Yum"
So this obviously was not in the cookbook, but sometimes it’s ok to diverge from the path. This is a cooking blog afterall. So this is homemade apple sauce. You may ask, “Why the weird title?” Well, I’ll tell you. Back in the day, my dad had a horrible time getting me to eat. The only way he could convince me without a fight, would be with a reward. Most often, this reward was food. I could get dessert if I ate all my dinner. One of the things he would make was “Apple Yum Yum” and it was warm and literally the best apple sauce ever. (He even had a song for it!!!!) Now that I am older, I am the only person other than him who knows the recipe.

Pretty much a pecan pie thats square shaped and cut into bars that you can hold. Also, this pie crust is home made. If you’ve ever made a home made pie crust and it turned out well, bless your soul cause that shit IS NO JOKE. 
I have baked pecan pies before, but I have to tell you that this one is not as easy as the others. I took it out when it looked done, and the time was up. But when I cut it later, it was too watery. So I put it back in the oven and I’m hoping for the best.
Wow this is long. Ok, so let me finish off by saying I am so glad that this is in the book. I only eat pecan pie and am endlessly searching for them because they take forever to bake. But this was actually amazing and its just really good. It tastes like heaven.

Chocolate chip and Pecan cookie dough, in a pan then cut into bars. Happy First Day of School!!!

Shortbread cookie base, with a cream cheese filling and lemon curd topping. Besides taking forever to prepare these semi sturdy lemon bars, it also was no walk in the park. Especially the lemon curd. It just would not thicken! It took forever to get it to maintain some consistency and even then, it wasn’t enough, but we rolled with it.
Special help from Cara. We baked these for the summer blood drive our school was hosting.

They aren’t christmas themed since it’s the middle of the summer and I only have a gingerbread men shaped cookie cutter. Also, after making the dough, I ran out of flour and rolling these out was not fun. They stuck to anything and everything. That’s another reason that they’re this weird round shape.
Rating: 7/10
Difficulty (with my flour shortage): 5/10

Powdered sugar covered chocolate cookie crescents.
These were for my family friend’s birthday. A couple notes about this one. Besides being delicious, they kind of look like turds. Even the professional ones look like Mr. Hanky, but if you’re ok with the shape and color, dive in. Fairly easy, my main problem with this one was rolling on the powdered sugar. Since the shape is so weird, they didn’t roll well in the bowl. Also, the powdered sugar absorbed some moisture from the cookies and got sticky (kinda gross).
